Chocolate Rum Balls
 Source:  Ran across this recipe from one of my early cookbooks and good for a make-ahead party dessert.
Makes about 48 balls

INGRED:


2 cups chocolate cookie crumbs (chocolate wafers)
2 cups confectioner's sugar
1 cup "ground" almonds (or pecans)
1 cup "chopped" almonds (or pecans)
1/4 cup coca
1/4 cup rum
3 tablespoons corn syrup
1/4 cup granulated sugar
 

 

RECIPE: [No Bake]

 

1.  Combine cookies crumbs, confectioner's sugar, ground nuts, chopped nuts & cocoa and set aside.

 

2.  First rum and corn syrup together, then add to the dry ingredients.  Mix thoroughly.

 

3.  Pinch off pieces and roll into small balls the size of a "walnut".  Then roll in granulated sugar.

 

4.  Place into a tightly covered container and refrigerate for two days prior to serving.

 


Makes about 48 balls
