Rice Pudding
 Source:  Mary Valenti the sister-in-law of Joe Caltagirone.  Joe would invite me to join him and his wife Dora at his sister-in-law's condo on Bayshore during my lunch hour and I enjoyed many great food dishes.  She shared this recipe and a few others that I was smart enough to write down.  Truly a wonderful cook and for me many fond memories.
Makes TBD


1/2 cup short grain rice (Valencia)
1 cinnamon stick
1-3/4 cups of water
1/2 lemon rind

1 quart of milk (for creamer pudding add 1 cup more)
3/4 cup sugar




1.  Mix together the rice, cinnamon stick, water and lemon rind.  Cook above until water evaporates.


2.  Add milk and sugar.  Cook on high until it comes to a fast boil, then lower heat to medium-high.  Stir constantly all the time until it has a thick consistency, but not too dry.


3.  Sprinkle with powdered cinnamon on top before serving.
